While Russian osetra caviar is considered to be second best to beluga, it still commands a devoted following. .

The osetra sturgeon weigh between 100 and 300 pounds and mature sooner than Beluga (hence the lesser cost). Osetra is a medium-grained Sturgeon Caviars and is notable by its beautiful colors -ranging from a light golden brown to a deep gold. It has a delightful, nutty taste that has a hint of fruitiness.

Osetra caviar is available to discriminating buyers in three different grades:

000 (also known as grade 1) - Lightest color, also called 'royal caviar'. It's the most sought-after and craved by demanding connoisseurs worldwide.

00 (also known as grade 2 ) - Medium brown.

0 - Darkest caviar.

Generally, the lighter the color (and higher the grade) the more expensive the osetra caviar will be.

Also be sure to look for osetra malossol caviar. This simply means "lightly salted" in Russian, although today the term has come to mean any high-quality caviar. It takes great skill and experience to judge at what stage a sturgeon's eggs are absolutely right for this process, which should not contain more than 2.7-3% salt.
