concerns about the decline of the Russian Sturgeon have led to an interest
in domestic caviar. One of the Premier U.S. caviar, favorably compared
to the best Malossol beluga, is called California Select or Sterling. The
sturgeon from which the caviar is harvested are farm raised by aquaculture,
taking 8-10 years to mature and produce firm, tasty brown eggs (locations
include Tennessee, North Dakota, Montana, Kentucky, and Missouri).
American
caviar, more reasonably priced than the Russian variety, has gotten a lot
of enthusiastic press in the past three years as part of taste tests, restaurant
menus, Business Week, Time, Gourmet, chef endorsements and publications
such as the Wine Spectator.
