caviar is the common Russian caviar available as the sevruga sturgeon is
much more common than the beluga or osetra. But the taste is still outstanding

sevruga sturgeon weigh less than 100 pounds. Servuga is the smallest grained
of all the Sturgeon Caviars and ranges in color from light grey to almost
black. It has a full, robust flavor.
