000
is the lighest gray.
00
is medium grey.
0
is dark grey.
It's
been said that the lighter the color, the older the sturgeon was from which
it was harvested. Thus, 000 is the most expensive.
What
about tastes and flavors, I hear you ask? Consider the following:
Beluga:
Delicate with a slight sweet flavor and full finish. The essence of the
caviar should last and develop after being swallowed. The finish of the
caviar will complement a nice, dry, crisp Spirits.
Osetra:
Very different from Beluga, nutty in taste, and tending to be earthy and
slightly briny. Osetra, a great starting Caviar.
Sevruga:
A robust flavor, not as subtle, with a more ocean flavor.
American
Sturgeon: Simple, light, and sweet river fresh taste. Very firm eggs
that work well in recipes.
Gold
Pearl Salmon:
A great rich Salmon flavor, sweet and firm from Alaska.
American
Golden: Roe from Great Lakes Whitefish, nice and crisp with a light
pleasing flavor.
Tobiko
and Wasabi Tobiko: Japanese Flying Fish roe, dyed to vibrant colors,
such as orange, red, and black. Wasabi Tobiko is naturally colored from
Wasabi Mustard Powder, creating a spicy Caviar.
