do you store it?
Answer:
The refrigerator (and never the freezer).
Once
in your home and opened, your caviar should be completely savored within
a few days (not weeks!). Any leftovers can be stored in the coldest part
of your refrigerator (again, not the freezer!).

minutes to an hour before serving, take your caviar out of the refrigerator,
but do not actually open the can or jar until the last minute. Caviar should
not be exposed to the air for more than 1 hour. Be careful not to crush
the grains when scooping them from the tin.
You
may use spoons made from gold, malachite, lapis lazuli, amber, horn, tortoise-shell,
wood, silver, or pearl, but refrain from using stainless steel or silver.
These materials oxidize and affects the taste of the caviar.
If
the entire tin cannot be finished, leftover caviar can be preserved
for a short time by gently and carefully pressing plastic wrap against
the surface of the caviar. Rotate the tins twice a day to evenly distribute
the oils throughout all the berries.
Shelf
life, unopened, is anywhere from 6-8 weeks or longer. Be certain to check
with your caviar house for their recommendations.
